Collected in accordance with precise and ancient traditions, whole-leaf green tea forms the cornerstone of our house blend. With a delicacy usually associated with Champagne grapes, our tea is unsurpassed in quality.

We let out tea chill before mixing in our live natural culture, our SCOBY. By cooling the tea, we're making sure our Scoby stays healthy and can easily complete a slow and steady fermentation. We've learned that if you take care of your SCOBY, it will take care of you! Our fermentation process can take anywhere from two weeks to a month. Since we designed our facility from scratch just for kombucha production, we have the ability to complete a continuous long fermentation to produce a full range of organic acids - including acetic acids and gluconic acids - and micro-nutrients.
Our complex fermentation process in a biochemistry experiment that's been perfected into two steps. First, organic sugar is converted to alcohol. Then, the alcohol is converted to organic acids and micro-nutrients.
Natural fermentation is a complex and slow process. Luckily for us, there is plenty to do around the brewery while we wait patiently. But sometimes we slip away for a quick yoga session or surfing lesson to help pass the time.
After the cycle is complete and our brew is full of all the healthy byproducts from fermentation, we gently cold-filter Clearly like a fine champagne so that you're left with a crisp clean finish!
Next, we fill carefully fill our glass bottles and press on an old-school bottle cap.

The brewing process begins at our built-to-spec facility in Fairfield, California where we use locally-sourced triple filtered water to start putting the clear in Clearly. Even before the first level is pulled in our operation, our vigilance has already begun by providing the cleanest, safest, and most environmentally friendly water, ingredients, and brewing conditions.
When it comes to releasing the tea's natural flavors and health benefits, timing and temperature are everything. Green tea contains EGCG, a tea catechin & antioxidant, which is heat sensitive, so we don't want to brew the tea too long at too high a temperature. Preserving the antioxidants is the number one goal at this stage of the process. This step is also when we add high quality organic evaporated cane juice to fuel the fermentation that's about to take place.
